Sourdough Pretzels

This is the 1st time i'm making pretzels.
I made a sourdough version of the recipe posted here. Except i bathed it in an off-boil soda solution. :)
It was crunchy on the outside and chewy inside. What's authentic German pretzels suppose to be like, as in texture and taste?
