Ok. My first post.
I found this site after I decided to get into baking yeast breads. I had a hard time figuring out from books how to properly knead, and I have found this site INVALUABLE. Thank you so much for the content, here!
I've read extensively the thread started by Eric (way back when) on kneading, and I especially liked the link to Julia Child's video clips. (I've watched those at least five times, now!) Being a bit of a traditionalist in my other pursuits, I decided to try this in the traditional style, with nothing but flour, salt, yeast, and water. I have found that even when I have used the low end of baking times from the BBA, my bread is done, sooner, so I will try and work more on look and feel, in the future.
Anyway, thank you, again, for a great site! You've really helped to move me along.
