Hey folks, just thought I'd let you all know that I've put up a new video and blog post. This one features a Tartine style loaf made with a fairly wet dough and a third wholegrain flour. Nothing too fancy, but should be interesting for those who like playing around with higher hydration doughs. I'll go ahead and embed the video here so you don't have to leave TFL to watch it, but here's a link to the actual post for anyone that's interested in reading the more detailed article that accompanies it. I tend to be a bit of a sporadic contributor here -- I'll go on a bender for a week or two, then I'm pretty quite for a while, then another bender and so on. But I love this place. I've learned a ton here.

First video from you that I've seen dealing with a pretty high hydration. Cool! Gorgeous loaf!

What kind of bread flour do you use? I'm curious about the protein content

I'm using King Arthur Bread Flour there. I think it's a little over 12% protein. It's nothing fancy, but certainly a good strong flour. This isn't the first time I've visited wet doughs. You should check out my video on how to mix wet dough by hand. It has the same hydration (85%) but with less than half the whole grain of this loaf, making for an even wetter dough. It mainly deals with how I like to mix wet dough, but I briefly show a bit of the remaining processes as well.

Thanks for this Trevor; excellent video and beautiful loaf! Question - your mixing method looks very easy for one loaf, or maybe two. Have you used this hand method for a batch of four, six, eight loaves or more? Got any videos showing variations to the method for large batches?

I haven't personally used it for any more than just a one or two loaf batch. I know a guy who used it for a 6 loaf batch and he said it wasn't that difficult. But I'm guessing much more than 10 or so loaves and it would start to become pretty difficult. To me it's really only suited for small batches of wet dough. It certainly won't work for stiff dough, and the larger the batch the more shoulder strength will be required.

Here's a video of Gerard Rubaud -- the guy I learned it from -- using that method to mix a good size batch. There has to be at least 10 loaves worth of dough there, probably more.

Of course, you never really know the limits until you've pushed them. If you ever attempt this on a larger batch please let me know how it goes.

Followed! Lots of good stuff there. I like that you post recipes and videos of the entire baking process. Many baking related Instagram accounts mainly post finished loaves.

High hydration with various amounts of wholemeal is right up my alley.
