Interchangeability of test sieves

All,

I'm ready to add a handful of test sieves to my collection, and in a effort to save some cash I plan on sourcing these second hand on eBay. Can anyone here speak to the compatibility of test sieves from various manufacturers. For instance, can I pair a 12" VWR sieve with a 12" Tyler sieve? 

Does anyone here mix and match like this?

Yes, at least for 8" sieves.  Save a little more by using sauce pan and lid.

I have 8-inch sieves from Gilson, Universal Wire Cloth, and Advantech. They fit together. They also fit Revere and Farber saucepans.

The size of the mesh?  Something finer than an oxo sifter but smaller diameter than breadtopia type? Breadtopia recommends no smaller than #40 but oxo doesn't specify screen size. I am not getting out 11-14% hard bits so I need another finer mesh

Why use a sieve rather than a regular sifter?

I'm actually interested and not challenging you.

And I'm even more curious how to use a pan and lid for the job.

A regular sifter is too small in diameter and doesn't come in a variety of exact mesh sizes.

 

A fitted pan and lid are nice to prevent flour flying around during vigorous shaking.

Is shaking another method for sifting? Kind of aerating it i guess?

Are different mesh sizes used for different flours?
