Homemade Proofing Cabinet

Hey all,

After lurking on here for a while soaking up info about proofing my doughs, I decided it was about time to join (first every post).

As a long time baker (I believe I made my first loaf of break unaided when I was about 7) and I have been into more advanced shapes recentsly (taught myself to make cinammon scrolls, bagels, platted loaves etc) I knew I'd need a more consistent way to proof my dough (my house temp can vary between 15 deg celcius up to 35 deg celcius).

I'd gotten sick of using my oven or microwave, and really wanted a small project to work on with my mate, and here is what we ended up with:

  • This wooden cabinet which forms a very good insulator,
  • Heat cord as a heat source,
  • thermostat to regulate heat,
  • optional 2 mesh shelves to allow for three shelves of shaped bread (main wooden shelf plus 2 mesh shelves),
  • shorage area below the proofing area for storage of baking equipment.

I just used it (with the mate who helped me make it) to proof first some pizza dough, and a small loaf of basic white bread, and both were fantastic.

I'm wanting to move into the wonderful world of sourdough (which has been a goal of mine for some time) and if any of you have any suggestions of where I should start, please flick links to the thread to me!

Nice work on your proofing box.  There is an entire section on this forum for sourdough,  plenty of reading there.  My only suggestion is that on occasion you might also put a small bowl of ice in the bottom of your box to allow you to retard dough in addition to using it to proof - that can help on timing on sourdough.

Should be just the thing for proofing dough. Wish I had room in my kitchen for something like that.

It looks good but if you are adding humidity in a wooden cabinet mold growth could be an issue, it would be an issue in a metal box as well but it can be cleaned more easily.

standard things to have in the house as a piece of furniture.  Yours reminds me on the outside of an antique one I have seen recently but can't seem to find a picture of it now.  Here is fancy do French one
