Silicone Baking Mats

Hello, we are company that produce silicone baking mats, so we were wondering can you tell us what is the best size of baking pastry mat for you, and what color is better for you to have. We are doing this research to satisfy our client's need, and of course your needs as a professional baker, cooker or simply home baking person.

From my perspective as a home baker, a conveniently sized mat is the one I would choose when shopping. The mat would have to fit standard sized pans, such as a half sheet or full sheet pan, that I might find in a B&M store or at Amazon.com. As for color, you would be better off just trimming the edges with separate colors for the different sizes. That way I could quickly identify the proper mat when searching through my equipment cabinets.

I own at least half a dozen silpats (I have given a few away to friends who visited and marveled at how useful they are) to be used for baking macaroons and fruit crisps in the standard quarter- and half-sheet sizes. What I don't have, because they are not available in the market place, and would love to add to my silicone mats collection are 8-inch or 9-inch rounds which would fit on the bottom of tart pans. That would be much easier than cutting parchment paper rounds (I have those too). No preference for the color as long as they bake evenly. No crazy color though; I like everything classic or monochromatic. Texture and ease of handling matter more to me.

  What is the maximum baking temperature?  Silpats are great, but sometimes parchment fits the bill better, or baking direct on stone.  Most parchment isn't recommended at temps over 450°F.
