It came out really well. Using AP white flour and 70% water

Congrats!  Why did you stop?  Was it tedious to feed and maintain the starter?

I ask because I have yet to try a sourdough for that reason.  I feel like I might get sick of having to make bread from it after a while.

I had a really busy year and just kept making yeast breads. So, I decided to buy a starter online and start again. I am not going back to yeast any time soon.
