That looks great. I keep meaning to try my hands at bagels, but to do a 100% sourdough is even more impressive.

Thanks for the compliment. I would say go for it and try making bagels, you won't regret it. I am happy to share my method if you may need it. I use a method I develop after lots of failure and trial and error.
