Hi from a Newbie to The Fresh Loaf

I wanted to say "Hi" and introduce myself.  I have been baking for years and years.  My daughter is gluten intolerant and is also allergic to bees, and  honey, and her hubby is allergic to potatoes and a great amount of other foods, veggies, fruits and  red dye, etc.

I am trying to find recipes to make my own flour.  As everyone who is on a limited budget know, (most of us), it can be very challenging to find the right ingredients. 

A trip down the flour isle is a real education in terms of prices.  I milled oatmeal last night, planning on making a loaf of oat bread only to find out that it might end up being "gummy".  I have some brown rice I can mill but I understand it needs something with it, arrowroot, or some kind of starch?   

I am thinking of milling some rice and trying a loaf using rice flour and oat flour; resources are going to be scarce until payday. 

Any idea on the mixture ratio?
