sweetcornbread

This quick bread was made with ground dried sweetcorn. It is a typical cornbread mix using 1.5 cups corn meal, 1.5 cup AP, milk curdled with lemon juice, melted butter, baking powder, baking soda and salt somehow I forgot  the usual egg. No sweetener was added because the ground sweetcorn was already sweet enough when tasted raw. It was cooked on the grill as we're the brats to go with it. 

The dried sweetcorn gives the bread a distinctive flavor of Summer. It was an experiment that will be repeated when the opportunity arises. Luckily there is enough left to make an addition to a yeast bread in the near future.

Some of the best comfort food and baked in a cast iron skillet makes it authentic. Your meal looks great, just need some greens to accompany, and maybe a beer.

Nice experiment, glad it worked out happily!

We did have what I call garden slaw which is a mixture of shredded vegetables with a vinegar based dressing very tasty and a good use for the dwindling garden yield. 

Somehow some of the beer the brats were simmered in managed to make it in the form of an icy bottle onto the table.

Love cast iron most of it vintage inherited or received as cast offs before the recent upsurge in interest. Sometimes I'm surprised the cupboard holds up under the weight.

Floyd's version using the sweet corn flour, cut back the sugar and use buttermilk.  I was drooling all over the recipe while cutting corn off the cob.  The great thing about it is you won't get any bitterness from soda or baking powder as it uses yeast.  Worth a try.  And you can still bake it in a hot iron pan (with drippings!)

That is what I want to try next with the ground sweetcorn. As I was mixing up the liquid portion of the cornbread buttermilk came to mind but the nearest store is ten miles and closed on Labor Day so the milk and lemon juice was a poor substitute at least it activated the baking soda.
