Reliable, Rewarding Sourdough

A really crazy, busy week. I fed the starter, but did not get round to making the dough until the next evening. There was no time to make the loaf, so the dough sat in the fridge for another night and day. The next evening I took it out, briefly kneaded it and formed a loaf. Back in the fridge overnight. She did not look impressive by the next morning. I was in a rush and left the oven on too high a temperature. She burst out of her skin, and rewarded my neglect with a really tasty loaf with a great crumb. Thank you sourdough!

This one looks great even though it might have exploded a bit in the heat - maybe a bit under proofed?  But with all that  retarding it had to be flavorful.  Love those blisters and the the crust color looks spot on.  Well done and Happy baking

Definitely a bit under proofed. I was really pleased it exploded rather than what I expected. I thought it was going to come out of the oven resembling a brick.

Your loaf turned out great, despite a bit of neglect - not forgotten, just attended to as possible. I did much the same last weekend. Hadn't baked in several weeks and was itching to do it, so threw together a multigrain formula on the fly, autolysed, stretched and folded, incorporated a bowl of cooked oat porridge and a couple of handfuls each of walnuts and cranberries. It was late, so wrapped it up and refrigerated it until morning, when preshaped, rested and shaped a boule, popped it into a basket, then wrapped and tossed it back in the refrigerator. Finally had a chance the next evening (18-20 hours later) to turn it out, score and bake it. I didn't get quite the spring you did, but you sure can't tell it was neglected and it tastes great.

It certainly looks great. And I am heartened to hear that I am not the only one who end up baking on the fly when things get a bit hectic.

Seriously, the crust looks amazing.

I think my family thinks I'm nuts taking photos of my bread. LOL
