Central Milling flour at Costco

Well, it looks like the Costco in my town is now carrying Central Milling AP flour. They are still carrying the Miller Milling flour also. The Central Milling flour was $14 for 20 lbs. While I was standing there discussing with my daughter about the flour, a woman came up and grab one. She apparently loves the flour for baking bread. So, I picked some up and we will see how I like it.

I have settled on the same flour as Forkish uses, Shepards, which is available at my local Cash and Carry for a stunning $17 for 50lbs.

That's a heck of a great price for flour. I think Cash and Carry is the same as Smart and Final which I don't have one real close to me. I think Chad Robertson uses (or did use) flour from Central Milling. I did see an interview where he said he was planning on starting to mill his own flour.

KathyF, I was recently at the Central Milling retail in Petaluma and noticed Tartine on the truck delivery schedule board. Look as if Costco might be cheaper than direct!

Costco was carrying the #25 Organic Artisan Bakers Craft Plus Malted flour from Central Milling for $15, but then they switched to the 2-#10 Organic AP flour.

I found that the breads that I was baking with the Organic AP flour did not taste as good and the crumb was not as open, using the same recipe for both flours. I guess I will just have to go to Petaluma to get the Organic Artisan Bakers Craft Plus flour (Tartne uses this flour) which is a trip across the bridge.

Well, I guess I will have to see how it goes since I have 20 lbs. to work with! It will be interesting to see how it compares to King Arthur.

How do you keep bugs out of the flour? Just checked the Cash and Carry closest to me, they carry high gluten and AP Shepards flour, what a great price? Just concerned about those moths!

While you are there, check out the huge selection of sealing tubs/buckets.

For a modest investment, you should be able to find something to store the flour in. I saw up to 32 gallon containers online for under $40.

 P.S. 50# is lasting me 3 weeks.
