A spelt sandwich bread that turned out rather nicely with a pleasant soft crumb. Its whole wheat, so super healthy, of course.

Let us know how your spelt (?) bread turns out. I cook spelt grain every
morning for breakfast, b/c spelt is loaded with nutrition.
Would love to try making some whole wheat pocket bread.
Think I always jump the gun a bit when it comes to spelt. It proofs faster than wheat and always scared it'll over proof. Otherwise very nice and tasty.
