I finally got a hold of the T65 flour. 75% hydration.

Thank you for your reply. I have a family of four with two teenage daughters and these will be gone in a week. It's always helpful to have neighbors as well. ^^

...usually attract teenage boys.  If that's the case, it's possible you don't have enough bread.  Lovely bread, BTW, and great photography!
