New tool: Lekue Silicone Bread Maker

Great for making 'no knead bread' see picture (can mix and bake in same container if desired). I used my regular no knead bread recipe (not the Lekue bread recipe). Baked up wonderfully. You can make the bread in a round shape by not closing the silicon container or if you clip/close the container the bread is shaped as an oval (more like a foot ball). I baked the no knead bread at 425 degrees F (the instructions with the product state the max temp is 428 degrees for this silicone baking container). Normally when I make no knead bread in a Lodge cast iron Dutch oven I bake at 450 degrees F.  With the silicone Lekue Bread Maker, I got a wonderful crust/crumb at 425. I sprayed the dough with water and sprinkled on seeds (I find water helps seeds stick better than oil). I used the maximum amount of bread flour you can use with this bread maker size when using it in the closed position (to start with). I wanted a larger loaf and I suspected the dough might rise higher in the container. So I only kept the container clipped closed for the first 30 min. of baking then "unclipped" the silicone container top and the loaf continued to rise a bit higher with the container completely open. I used my regular recipe for no knead bread: 500 grams BREAD flour (approx. 3.94 cups dip and shake method), 375 grams water, 11 grams sea salt, 1/4 teaspoon INSTANT yeast. I mixed and left it covered with a plate at room temp (78 degrees) for 16 hours, then placed it in the refrigerator covered with a plate. Normally I keep dough in the refrigerator from 1 to 8 days (cold fermentation) then use the dough at any time after it is chilled in a no knead method for baking. Great product, lightweight, can be carried in suitcase if traveling, washes so easily. Can be used to roast meat and vegetables in the oven. Can also use in microwave to cook vegetables, corn on the cob etc. I have been making no knead bread in cast iron and the old fashioned corning ware for years..... and I love this Lekue for my regular no knead bread recipes. can see it folded flat around my traveling scales.  Instead of the clip, I might be able to use my silicone cake pan as a lid both for bulk rising and perhaps baking of larger loaves.   Like how you worked and decorated your loaf.  :)   

I wonder what I could use to close up my silicone cake pan folded in half?   A rolled silicone matt for round bread?

The only reason to clip/close the Lekue is to get the football shape.. it is open on both ends so there is good air flow.  So you should be able to use your silicone cake pan and just leave it open... for a round top loaf.  Another option if you want a longer shape is to insert your silicone cake pan into some type of oblong container (oval corningware? etc).  The Lekue does give an all around football shape. I'm made to think that a silicone cake pan bending it slightly would give you "ridges" of the cake pan.  If you try it ... let us know with some pics.
