Forkish double-fed sweet levain

This was my first attempt at a Forkish recipe, and given that my starter has become a little too acid in the last few days, I'm reasonably happy with it. Tastes good!

It certainly looks fine and I've always wondered about using a sourdough starter in sweet/enriched doughs, but it sort of feels somewhat wrong... Although I do add a bit of honey into my sourdough spelt loaves just to lift the more "earthy" taste of the spelt up a little...

Food for thought though!
