how do i make home made marshmallows in a dlx mixer?

Hi,

I urgently need to make home made marshmallows.  Every few months, I get a hankering to try but never did because I have a DLX stand mixer.

All the recipes require a whisk attachment to whip the marshmallow mix.

My mixer came with the plastic bowl and whisk but it seems too delicate and plastic for making marshmallows???  I've only used it to whip egg whites.

Will the roller and scraper on high speed be able to make fluffy marshmallow?

How do I make marshmallows in my DLX mixer?

That's what you need the whip for.  To whip egg whites with sugar.  Then after adding the cooked sugars you'll add melted gelatine and mix in.  then you turn out onto cornstarch/powdersugar and roll out to desired thickness before it sets.   The roller scraper will not work.  You need to use the whisk attachment to make a meringue.

I was worried the plastic bowl would melt when adding the 250 degree sugar mixture?

And worried the thickening marshmallow mixture would be too heavy for the whips- the teeth/bracket is made of plastic?

I'm worrying for nothing?

The sugar will probably cool fairly quickly with the mixer going.

That said, it would be worth checking to see if the manufacturer has information on what temperature their materials can handle - if you no longer have the manual, you could try their website or even calling the company. I'd be surprised if this information were not available.

I tried making plain vanilla marshmallows yesterday and it was a big mess and never made it to the fluffy stage due to mechanical issues.

I used the plastic bowl with whips, bloomed gelatin in the bowl and under low speed slowly poured the hot syrup.  At about 5 mins of high speed, it started to make a loud racketing noise- slipping at the notches of the whips.

I stopped it and pulled it whips/attachment piece up and there was super sticky marshmallow all over/under/in the notches where the whips attach to the mixer.

I tried to remove what was formed but it was soooo sticky gooey and basically 50% solidified in the bowl.  I noticed about 25% of gelatin was still at the bottom of the bowl.  The whips never incorporated it.

The bowl looks fine, no warping.  

What did I do wrong?  How can I prevent the mixture from creeping up into the notches on the attachment?
