Spiced Rye Sourdough

 

I am honored to be participating as a recipe tester for Stan Ginsberg's upcoming bread book featuring rye breads.  We are not legally allowed to share or discuss the actual recipes we are testing, but fortunately we can at least wet your appetite with some photos.

I have to say I was very happy with the way the first recipe came out and even though I am not normally a big fan of spiced bread this one was subtle enough that it worked.

I got my NYB order today..so I'll be starting tomorrow night. We are not in the same group, but I sure hope I get to try that loaf. Looks like I'll need to get a Pullman pan. I usually use a brotform..sometimes loaf pans, if I have to. But I can see the Pullman definitely makes the loaf what it should be.

You will like this one.  You can use 2 Smaller loaf pans if you don't want to buy a Pullman but I figured I might as well get one anyway.

Me, I thought it could use a wee bit more spice, actually.

Note to self, try with cream cheese for breakfast. I opted for two small loaf pans, as my only Pullman is verrry long. One loaf is half gone, the other is in the freezer.

What a fun challenge. The schedule may feel ambitious at times, but stick to it and become part of something terrific!

Meanwhile, enjoy a variety of new and interesting breads. Ian, yours looks wonderful!

Looks very good! The smell of the combination of spice and rye must have been great too.

Enjoyed the first bake, thanks for the hint about the pullman pan. I never used the one I had so gave it away last year. Now I'll just use two loaf pans and not have to borrow it back.

Hope we all continue to enjoy this testing process,

Lovely bake Ian!  Just the thought of spiced rye makes me think of Austria and Christmas!  This must be a great winter warmer comfort bread, please keep your test bakes coming, you're lucky to be able to take part in this!  What fun!

Appreciate your kind words.  This one is a good way to start off the testing fun.  From what I've seen from some other posts I have a lot to look forward to.  This book looks like it is going to be a real winner.
