Hi everyone

I wanted to share our regular everyday loaf, as it turned out rather well this time.  It is an enriched dough, and the ingredients and recipe are as follows:

2 cups whole wheat flour
4 cups bread flour
1/4 cup flax seeds
2 tsp yeast
2 cups warm milk
3 TBS olive oil
2 TBS honey
1/8 tsp sea salt

Mix all dry ingredients in a large bowl.
Add wet ingredients and mix with a sturdy spoon.
Kneed for a few minutes until it forms a smooth ball.
Cover the bowl and let it rise for 1 hour or until the dough doubles its size.
Punch the dough down and spread to a rectangular shape and then roll it up to make a cylinder.
Put it on a parchment lined cookie sheet.
Let it rise again for 1 hour.
(if using a banneton, place the dough in a banettone and Let it rise for 1 hour. Dump it out gently on a parchment lined cookie sheet.)
Score the dough with a very sharp knife.
Bake at 375C for 40-45 minutes.
