I am looking for a recipie for calaberese bread .. Can you help?
There is a recipe for Calabrian Bread (Piccia Calabrese) in Carol Field's The Italian Baker, pages 142-143. It uses a biga, and ingredients include mushrooms, canned tomato, anchovies, capers, cocktail onions, artichoke, gherkin pickles, sweet red pepper. Is this the kind of recipe you're looking for? I'm not inclined to type it up unless that's what you want.
Oh, she says, "If you don't have everything, just double an ingredient you do have or leave out an ingredient or two; it doesn't seem to make a big difference."
Thanks for the recipe...
The bread I like can be purchased in A$P in Canada It is the best.....
I have spent hours lookong for reecipe for it.. It is a plain crusty bread with a wonderful flavour.
There is a recipe in the Ace Bakery cook book so I will look into that
I found this doing a Google search. I have not checked this against my book but it states the recipe is by Carol Field as mentioned above by Rosalie. Hope this is what you're looking for.
Yes, ZB, it looks like the same recipe. I'm glad I don't have to type it up.
