I am thinking of making bagels over the weekend, I would like to know whether I can put the dough into the fridge after the kneading process, then shape the bagels next morning.

I've always shaped them in the evening, then put them in the fridge and baked them in the morning (see the bagel recipe here), but I don't know why you couldn't shape them the next day. If you do that you might want to give them an hour or so to rise in the morning before boiling them so they don't end up too dense.
