I am currently sprouting, drying, milling and baking with sprouted grains in my home based bakery. I am looking for equipment and good information on how to sift bran from my sprouted flours. I don't want to grind it in, I want to remove as much of it as I can. Currently I am using an 8 inch stainless steel fine mesh sieve. Most of the sieves I've purchased locally are too large in the mesh size and do not remove enough bran. I would like access to better screens to put on larger sieves without purchasing a large commercial sifter. I've ordered a sifter attachment for my Bosch mixer but am thinking it will also have too large of a mesh size. I've ordered a fine mesh sifter from Amazon (10"). Hopefully it is really "fine" mesh. I would also like more information on how to achieve the different grades of flour. I'm interested in knowing if milling should be on a coarser grind so the bran size will be larger and therefore easier to sift out? Etc.
