Question five-day old starter

I initiated my starter last Thurs (today = Tues) by mixing a 1:1 ratio of rye flour and filtered water.  24 hours later half was removed and replaced.  The ratio is 2:2:2     100% starter : water : flour (rye).  Since then it's been fed every 24 hours and the last two feedings have consisted of the same proportions but with 50:50 AP and rye.  (EDIT) The starter doubles in less than eight hours in an over 82-4F.  Should I continue the subsequent feedings:

  • every 24 hours
  • 2:2:2 ratio
  • AP flour only??????????????

(EDIT)   For subsequent feedings to slow the rise should I:

  • decrease the proportion of starter
  • decrease the amount of water added for feeding
  • or increase the amount of flour??????????????

I have learned that the Flour should stay the same and only changing the Water to get a differend hydration.

You can also add cold water to slow the fermantation down, I do that with my Rye Starter at the moment , it was quite hot here the last 2 days.

I keep mine at 1:1:1 , have a 100% hydration Rye Starter.

I would also slowly introduce your Starter to a new flour.

So I'll use less water and cooler water than before, in a lower ambient temperature, to slow the fermentation.

2:2:2  mine = 1:1:1 yours,   same proportions  but mine is 2oz all the way thru.

to peak volume and falling in two hours...  feed more flour.  reduce to 20g and feed 50g flour (and water)   1:1:1 is too little flour for over 80°F  You might want to thicken it up more closer to a soft dough.  See how long it takes to rise to peak and fall back a little.   feed no sooner than 8 hrs .  Feed twice a day about 12 hr intervals.

whoops, ounces...   one half an ounce starter plus 3 oz flour and enough water to make a soft dough.

Oooppp, I re-edited my OP.  The starter doubles in less than eight hours and not two.  So sorry.

to twice as much flour to starter and watch it until peaking (it should more than double)   Discard and feed when it is falling back from that first peak.   Keep to twice daily feeds at about 12 hrs.  With each feed the time will shorten.  When the starter is peaking at 8 hrs, you can opt to feed it more flour.
