VOLLRATH CONVECTION OVEN

ARE THERE ANY USERS OF THIS TYPE OVEN IN THIS GROUP --- I HAVE ONE AND HAVE SEVERAL QUESTIONS REGARDING ITS USE --- I AM SLOW LEARNING BUT STILL HAVE SOME PROBLEMS RE THE CORRECT TEMPS TO USE AS OPPOSED THE RECOMMENDED TEMPS FOR THE STANDARD KITCHEN OVEN???

You should lower your oven temperature 25 degrees when using the convection feature.  I found that out when I got my little countertop convection oven.

I don't have that oven, but in general convection should be run about 25 degrees lower, and the time will still be quicker, so check earlier
