Just a quick hello.

Hi everyone i am David and I live on the pacific in Southern Humboldt county Ca. I am a retired chef that was my profession for thirty years. But I never baked, bread anyway. The stress got to me and I retired to the fishing business.

  My sister in law is from Sweden and does almost everything from scratch. After our last visit and enjoying homemade bread everyday I have started baking breads. I have been making some fair loafs to start and today I made my first with a sponge. I wish I could take a picture they look pretty good. 

Now my wife is making some tuna salad from albacore that I caught last summer and we canned together. I think we ended up with fifteen cases of troll caught home canned tuna. The best, my family won't eat store bought tuna anymore. That will go really well with this "Rustic Bread" recipe that just came out of the oven and the house smells heavenly.

Anyway I look forward to learning a few things here and hope I can soon learn enough to have something to offer..Lets be friends!!

Hi Josh, Dave here in Shelter Cove. I have been a chef for forty years and never baked and am just getting into breads. Have you been doing it for a long time, professionally? I do come to Eureka a couple time a month so I will PM you next time I come up with a few cans of Tuna.

For 15 years.  Pure focus on bread for the past 8 professionally.  Be sure and let me know a few days ahead so I'm sure to have a loaf or two for ya.  Shelter Cover is a ways from here.
