Oh that splatted spelt, and thoughts on ancient Egypt
My sympathies on your spelt NK experiment; I did something similar last week only with sourdough, and I've got to say, next to mine yours looks like the very picture of huge oven spring.
Turns out it's very easy to overproof spelt! Flat as a pancake, and foul tasting to boot.
My son has been wanting to try to re-create ancient Egyptian bread (he's loving the current thread on that!), so not having emmer on hand, we tried spelt. The mess up was all mine, however.
Not much time for baking just now, but I've promised we'll try again next week, when the exorbitantly priced emmer arrives in my co-op order....
