Cheese sticks

Does anybody have a recipe for cheese sticks? Not the kind you make with a cookie press, but like this brand:

I think it is a laminated sourdough with cheddar and asiago.

grate and sprinkle into the butter?  or just in one last layer...

Can imagine a ruler and pizza wheel would work well for cutting strips to twist.  or this

I do have a recipe for cheese sticks, or straws, a laminated but unyeasted dough.

That sounds like it would make what is shown in your link. Breadstick dough that is twisted and dipped and rolled in a shredded cheese and nut mixture:

I've made similar looking cheese sticks using puff pastry strips, brushed with egg-wash, sprinkled with grated parmesan or romano, twisted and baked.

I haven't the slightest idea what "twice-baked sourdough" means.

I would guess this included a drying bake after the initial bake to remove all moisture for storage.  

I know my boys would have these gone before the second bake, the aroma of the bake would bring 'em round like birds of prey.  They also like pie crust sprinkled with cheese.  I am constantly accused of not making enough "scraps."  

I would think a palmier recipe would work, instead of sugar, use cheeses.

Since my initial post, I've tried several recipes, including the one with pie pastry. None of them came out like the ones I was trying to copy, but I'm not disappointed. It turns out that just about any dough with cheese and butter is delicious. :)

These twists are richer and not as tidy eating as the ones I bought, but they have more flavor.
