LOL! I guess I asked for that. Funny about that "no-knead" name when you do a wee bit & stretch, pull, fold, turn, flour, bake.

Thank you, David! The drought *is* for real. We are at least 10 inches down from a "normal" year of rain - such as those are any more. Baking to learn & experiment with the different approaches between Jim Lahey & Ken Forkish, both of whose books I'm getting from the library. I've made the Lahey version & been quite satisfied although I keep coming up with "how come" questions. I've watched the Forskish videos & will give his approach a try.
So, for right now: bread! glorious bread! [something there is precious little of here in TheOC ;)]
