Hi I was wondering if anyone has experience using baking stones with convection ovens.  I'm opening a small cafe where breads  will be the focus.  I will also offer some pastries and light lunches.  I want a versatile oven and one that isn't using too much of my limited space but I want to achieve a good crust on the few (less than 100 loafs) of hearth style breads that I will offer daily.  Will these baking stones achieve a desired crust as well as a deck brick oven?  Any feedback would be great.
