Hello, Here is my baguette with my WEAK oven. :(

Hello everybody,

It has been long time to come here.

I hope that everybody is good and healthy, which is the most important for our lives, I wonder?

 

Well, I just started to challenge for a perfect baguette that I had been trying yesterday.

But I have had always a very weak oven.   I can't increase the temperature over 430F. :(

I am not satisfied with crust, neither scoring that I make.

 

 

I think that the crumb look fine. but I am really NOT happy with the crust and scoring.

I I can't afford to buy a new oven for sure.   Do you have any suggestions or ideas to make darker crust and have more oven spring?

It is so nice to see you posting again.  Is this a YW baguette, commercial yeast or SD? Josh (golgi70), just posted his YW baguettes not long ago too!.  You won't believe how many folks are regularly using YW now....very exciting...I just posted a YW./ SD combo levain bread myself - but there are a lot of others.  You have influenced so many Fresh Lofians even while away.

Your crumb looks very nice and it is a shame your oven doesn't go over 430 F -not good for spring, color or bloom :-(

Maybe Santa will leave you a new oven!  happy baking Akiko and so glad to see you posting again

Long time no see!!

I saw your great stuff !!   Ah, the one is with  commercial yeast.   I am making a baguette with RYW and bake it tomorrow if the dough is ready.

I have been facing with my weak oven for years!! :(   3 years ago? when I was here to post some baguettes and breads,I was able to increase the temperature up to 460F!! Then I broke twice. So, I was less interested in baking although I have baked for our family.

Hi Akiko,

Beautiful crumb on your baguettes!  I have never made a baguette so I have no experience with scoring suggestions for you :(

I know how frustrating it is to have an oven that won't give you the results you are after….I ended up buying a Cadco countertop oven a couple of years ago and I have been happy with it because it has steam and the spring I get in the loaves I do bake has really improved.

Hopefully someone will respond with suggestions for you because I know there are a lot of handy people around here who manage to get great results with whatever equipment that they have.

Thank you for your well wishes.  I hope all are well and growing strongly in your home too.  I imagine your children are  quite big now and I wonder if their tastes have changed in the breads they will eat.  I recall your daughter, like mine, preferred sweet and soft breads.  (My daughter is now in her 2nd year at college!!!!!!)

Yeah, I know...  I am very stuck on making baguettes...  :)

I know that I can't make a good baguette without the high temperature...  I wish my oven went up 500F.

Well, I could, but I will brake it again as soon as I try.   The ignition cord is too short now.... I burned over and over so my husband can't fix it anymore...  

 

 Yeah, our kids are growing!!  My son's height is as same as mine now.  ( I am 5"5)    Yes, My daughter is sweet tooth! :)  But, she likes sourdough bread FINALLY! :)

Hi Akiko, really nice crumb. I have been lurking most of the time in the past years but just wanted to thank you for the previous post on baguettes and yeast water. They have been really informative and I hope to try out yeast water one day. Hope you have better luck with your oven! I am sure someone will chime in with some useful tips.

Your baguette has beautiful crumb.  Every time I read a bread book which have baguette pictures in it, I just made a big sigh.  Baking nice baguettes is quite a challenge so it may be my one of 2014 New Year Resolutions. :)

Your Yeast Water has been very popular and greatly appreciated for all the information you provided.  

I've been thinking about you a lot lately.  Seems when I think about someone they contact me my phone usually.  So here you are and it's good to hear from you.

You make the most beautiful baguettes.  I hope you can get Santa to bring you a new oven for the holidays!  Sorry, the only way I can think of to brown them more would be to turn the broiler on them the last few minutes of baking :/  some do it for pizza.

 I am so happy to hear from you!!  Whenever I make spaghetti and meatballs, which I make one or twice a week, I think about you.   Your meat balls are the best!

 Your thought of me invites me here.   I have been sick for 4 months, and I was little struggling..  So I am very glad to come here and bake good breads that I have missed!

Hopefully I will get a new one soon.  I know that is the only way to solve my problem right now.   I have tried so many things to keep my oven hot, but it turned out somehow I damaged it more.
