Using a wood fired Big Green Egg for bread baking

A few years ago, we bought one of these...not cheap but what a wonder! you use wood chips instead of charcoal and can add flavoured chips too. We have baked pizza on it...it can get up to 700 degrees without actually throwing any heat around it...its ceramic...and it comes with a pizza stone. We have baked bread on it, and it tastes wonderful, but you have to watch it...it can burn easily if you get it to 500 degrees. Makes a spectacular pizza. Takes only a few minutes to turn out a pizza that is crusty, wood-smoke-tasty...
