I like this book--"Flour and Breads and their Fortification in Health and Disease Prevention" ---------------------- ISBN: 978-0-12-380886-8 --- It was published 2011 so it's fairly up to date.It has a very technical and concise content.   For example:CHAPTER 1 The Science of Doughs and Bread Quality,    CHAPTER 2 Monitoring Flour Performance in Bread Making   CHAPTER 17 Composite Flours and Breads: Potential of Local Crops      CHAPTER 27 Phytochemical Fortification of Flour and Bread in Developing Countries    CHAPTER 33 Partial Substitution of Wheat Flour with Chempedak--and so on...I guess it's basically a textbook.It is 542 Pages and almost 100 contributors.Victor R. Preedy, Ronald Ross Watson, and,Vinood B. Patel were the editors of the pub.
