Thanks, Jeurgen. Challah among Jews is a tricky thing. I was raised with the expression Two Jews, three opinions. We all have our own ideas about challah. My two current favorites are the Czernowitz Rabbi's challah from Maggie Glezer's A Blessing of Bread, and one from a baker in Jerusalem, David Weiner (recipe at breadmantalking.blogspot.com).
