Mina's S'mores Macaron

A good friend made me a birthday gift at work and they came out so stellar i wanted to share.  

I can include the formula as well in the next couple days when she forwards it to me.  Let me know if your interested.  

With less than a days notice I put her to the test and asked for a s'mores macaroon for my birthday.  She pulled it off and then some.  So good.  

The macaron shell is almond and grahm cracker crumbs.  The filling is a swiss meringue that she piped inside and then torched.  Then the top shells are dipped in a bittersweet chocolate glaze.

I requested she must have found this formula.  I do think she tweaked her own cookie formula and used the filling and glaze from this recipe.  

Its friggin delicious

I attempted some smores macaron awhile back. I replaced some of the sugar and almond with graham crackers. I use the Italian method for the shells. Then I made some marshmellow frosting and piped in chocolate ganach for bullseye style filling. I still need to work that recipe to get it right.
