Simple gum-free GF bread recipe


I recently discovered that I am gluten intolerant and have been looking for a GF bread recipe that is gum-free and simple. I would ideally like one that uses potato starch, flaxmeal, and a combination of amaranth, millet and sorghum (I have a GF flour blend made up of these last three ingredients). I am also lactose intolerant, but only mildly, and can tolerant milk in other things, so it need not be dairy free. Tapioca starch/flour seems to be hard to find where I live and almond flour/meal is just too expensive. I would love some advice on combining these ingredients or a simple recipe - I really do miss my bread in the morning!

Take a look in this forum for some recent discussion on this topic.The search box is your friend! Psyllium, ground flax seeds and chia seeds act as a great binder in GF breads.

I use psyllium husk powder or konjac fiber instead of xanthan. About a tablespoon of psyllium for a loaf bread, or sub exact amounts of konjac for xanthan.
