Central Milling Organic Artisan Bakers Craft Flour Coming to Costco

Hi All,

Just a heads up for Central Milling flour fans. A while back I asked Costco if they could start carrying the Organic Artisan Bakers Craft Plus Malted flour from Central Milling. I just heard back and they'll be stocking it in 25# bags starting mid-July (2013) once they've depleted their stock of the CM Beehive Organic flour it's replacing.

Organic Bakers Craft is a blend of hard red wheat, malted with 11.5% protein.  It's 1% higher protein than the Beehive so should produce dough with a little more strength, which is what I was looking for. As a reference, King Arthur all-purpose flour has 11.7% protein.

If you're in the San Francisco Bay area you should be able to find it in Redwood City, Mountain View, Almaden, Santa Clara, San Jose, Fremont, Santa Cruz and some other locations I didn't write down. Outside the Bay Area you'll have to check with Costco for locations. The item number is 475605.

As a bonus I believe this is the same flour the Tartine Bakery uses for their famous sourdough bread but don't quote me since I'm not 100% sure.

Yes i believe you are right both Tartine and Acme use this flour as their "white" flour. I am in the works to switching to their line of flours as well.  It's a great product and awesome that it will be stocked in Costco.  Any chance one of those cities was Eureka Ca?

I've been bugging them to bring it into Western Canada.  It's not working!  Maybe a west coast campaign?

you guys are AWESOME. I was just in costco a couple hours ago and saw said flour. First reaction was "OH NOO. They took away my precious AP flour." Then I went to google to see if the new replacement was any good, and it took me right back to this forum. I knew someone had already written a post! Always a step ahead of me :)

As an additional note, it's also available in the East Bay/Richmond Costco. I actually think the 25lb would be a bit too much for me, so if anyone wants to split it down 50/50, feel free to shoot me an email!

I was surprised and pleased to find that Costco in Woodland, California has stocked this flour. I really like having the two 10 pound bags, but I will deal with the 25# bag of this high quality flour.

I'm new to baking bread and just picked this flour up at Costco. Do I need to add wheat gluten to this particular flour to have good results baking bread or is it high enough in gluten. Thanks in advance!

I used to have to add vital wheat gluten & diastatic malt (which I bought cheaply on amazon) to the old version of Central Mill flour they carried ("beehive" I think), but I'm not sure with this one. Lately, I have been on a whole-grain kick, so I haven't experimented much with my Artisan Bakers Craft flour, but I'll keep you updated!

Not in Canada, I suppose. I was at a Costco store on the weekend and they only had one flour, white, in 20 and 40 kg sacks. Nothing organic (although you can get 2.5kg bags or organic unbleached white flour at Loblaws).

Great news, this will save me a trip to Petaluma.  Does anyone know what the price is for the 25# bag?

If memory serves me right, they were either $12.99 or $13.99. Not too shabby, huh?

Answered my own question, I just called the Richmond Costco and gave them the item number (thanks OP for providing it).  The cost is $14 which is pretty much the same price per pound.
