Hello from the west coast of Canada!

Hi there, my name is Helen and I just joined up today. I am excited to be a part of this great looking forum and website in general. I love all the ideas, pics and comments! I am a baker by trade and have nourished a strong baking urge at home for many years, too. I love bread, dough is my favourite... I love the feel of it in my hands, working it, making it conform (sometimes!) and finding out what I can do to improve it next time.
I have the pleasure of living in a small village and working in the village bakery. We do small batches of doughs, handmade croissants, danish, muffins, pies and cakes. We are just getting some cold display cases so will be working with quiche, meat pies, sausage rolls and the like. The owner of the bakery and myself are the only bakers and some days this means for a fairly heavy workload (mondays after being closed sunday, all the breads etc need dealing with) We do basic white, wheat, spelt, rye, sprouted grain, multigrain and raisin breads plus whatever I can think of to make bread out of! (anything, seriously!) I just did some batches of spicey black bean bread, yam and roasted garlic, feta and spinach. That is enough about me, I am going to look around at the forums and get some ideas!
