Bagels

I tried making bagels, using Peter Reinhart's tutorial on Epicuious. They turned out alright. Next time I would work the seam a bit more. I was wondering if anyone has picked up any other tips to share.

Might consider a lye dip.

For the seam try rolling out each piece into a dog bone shape. Wrap it around your fingers with the projections overlapping and towards the bottom of your hand.  Roll it against the counter to make the bagel of uniform thickness.  It should improve your seam.
