Uzbek flatbread cooked in a tandoor

The Joe Pastry blog is doing a series on flatbreads. Here's a video from Uzbekistan of local cooks making flatbread in what looks like a tandoor ... but horizontal rather than vertical.  Funky music :)

special occasion.  Notice how clean the outside top of the oven is when first fired?  It darkens with smoke as time goes on.  There is a vent at the back of the oven. ???

So cool to see the bread stuck on the sides and top baking away.  It gets moistened with water so it sticks well.

I've always wondered about the allure of a wood-fired oven since the wood and ashes are cleaned out before baking, leaving nothing to add any special flavor to the bread.  But this method bakes on the sides and ceiling while the wood is still smoldering, and must produce more flavor.   Interesting!
