Bouchon Bakery - Sugared Doughnuts

I think I found the first mistake in the cookbook. I was sitting reviewing some recipes and the the verbage for these doughnuts seemed off saying to add the the butter in increments. And I said to myself its only 5 grams, why that verbage? Must be cut and paste editing. So I converted the ounces to make sure the amounts matched. 2 ounces does not match 5 grams! its more like 56.75 grams. Since this is in the doughnuts/brioche section it doesnt make sense for the dough to have 5 grams of butter. I have not tried to contact the publisher or author about the correct amount. That might be fun to try and get ahold of Tom or Seb?
