Poster Child for Underdeveloped Dough
I recently ended up with several bags of AP flour (instead of my usual bread flour) and have been struggling to get the dough developed enough to rise properly. I read about the French Fold method here, and started using it plus liberal stretch-and-folds, and finally had a batch where I thought, "By god, this time I've nailed it."
Instead I got this:
I guess I know what I'm doing wrong, and I'm sure I'll be back with more questions once I've exited the Land of Ridiculous Loaves, but I thought I'd post this for amusement value. In a way, I'm actually pretty impressed with myself...
