Next Tuesday I pick up my completed concession trailer and get busy!  I can't wait.  That means that in exactly two weeks (March 2, 2013) I'll be making the Sinclair's Bakery debut at the Bozeman Winter Farmers' Market!  I won't be bringing the trailer since it's an indoor venue, but instead will be baking in the trailer here at my place, then transporting the breads and pastries to Bozeman, just like a regular market.

I'll post more photos next week when I get the trailer, and then some more when I get the graphics on the trailer.

That is spectacular.  What are you using to fuel the oven, fridge, etc?

...you can see the compartment for the generator, just to the left of the wheels.  Two of the ovens run on propane, and one is an electric oven.

...and the first thing I will be making for myself is a a bunch of baguettes.  I haven't had any in 3 months and I am going through some severe withdrawls.

No doubt you're itching to get rid of that new concession trailer smell and replace it the wonderful aromas of freshly baked yummies.

Checked out your photos.  A loaf of good bread, a bottle of good wine, good cheese, and great skiing = Nirvana.

I have new friends here in AL that are originally from ....Kalispell !  I was telling them all about you . They were lanenting the fact that they would be back in Montana and not be able to get any of your bread. Well I am forwarding all your info to them and I hope that they will be able to visit with a fellow Montanaite...hope that is right :)

I guess you're going to have to send them my way then, aren't you?  Although I'm much further from Glacier Park than I was before, I'm very close to Yellowstone, so there's always great scenery around here too.  Take care.

That is one heck of a gorgeous 'kitchen' !!!!  Amazing.  I am anxious to read how it all works out knowing there is always a learning curve when breaking in new equipment.  Should be a blast.

Yes, it will be interesting to work in it for the first time.  The ovens, proofer, and refrigeration are from The Back Home, but of course the work space is completely different.  I'm looking forward to it.

The picture looks much better then your drawing.  Efficient taken to the max. I can see now you will have some room to load the ovens.  Nice job.

Some things changed around a little bit from the drawing for the sake of weight balance and efficiency in the trailer.  It will look even nicer with the work benches in the back!  Of course I also can't wait for the first bakes in the new place.

Well, I just made 150# of laminated dough in preparation for the arrival of the trailer, so I've already got my hands in the butter!  Pretty soon I'll be eating baguettes every day for breakfast and making this place smell like a real bakery.  Thanks for the support!
