Stan Ginsberg at www.nybakers.com. I would give a shot at Stan and Norm's recent book, Inside the Jewish Bakery - edition 2. I just got mine and it is fabulous. I use Stan's recipe for bagels but have to admit I don't use first clear like he does. They are still fabulous and real NY bagels.

Funny thing is they are actually located in California! I was going to order some High Extraction flour from them but the shipping charges were way too high.
You can buy the Instant Yeast from King Arthur Flour or if you can go to Sams Club or Costco you can get it real cheap and store them in the freezer.
That would the only place to look. Good luck

I highly reccomend you go to Costco as they are the cheapest. You can buy 2 bags of IY for the price of one anywhere else. Below is the link to stores in Brooklyn.

I live in Astoria but have found that I can get most decent baking supplies in stores nearby. Organic/Green/Health food stores usually carry either Arrowhead Mills or Bob's Red Mill flour (sometimes both).
If you don't mind the new congestion from the arena, I would go to the Target at Atlantic Ave. They usually have King Arthur flour (bread, all purpose, and whole wheat) and some selection of instant yeast.
I've found that decent grocery stores in my neighborhood have started carrying fresh cake yeast in addition to instant. While the Fleishmann's and Red Star instant is usually in the baking aisles near the flour and baking powder, the fresh yeast is almost always near the dairy and eggs. Keep a sharp eye out, though, for two reasons: 1. expiration dates on the fresh yeast are crucial, but my local grocers haven't figured this out yet; 2. the foil-wrapped bars can look a lot like butter and I often pass them by without noticing.
Finally, you can go to Whole Foods. However, I'm usually unimpressed with the Manhattan stores' selection of flours and yeast. Plus, you'll pay more for whatever you can find at Target or local stores.

And you should also check out the baking stands at the NY Farmers Markets. There's obviously the Union Square Market, but also a less frequent one at Grand Army Plaza and the northern entrance to Prospect Park. Some of the bakers might have flour from local mills to sell you. Or, you could try buttering them up and see if they'll hook you up with some of what they use for a modest price. I have not done this, but have dreams of doing so one day. You can usually get listings of what vendors frequent which markets and on what days. It might not hurt to email the vendor in advance to see if they'll sell flour to you.

I buy my instant yeast from my local grocery store. I ask at the bakery and they sell me a package of instant yeast. They will also sell me any weight of caraway seed and poppy seed. Does not hurt to ask.
