I am sure i saw it...
please - can someone save me.
i am thinking i read a book and saw pictures like this:

i am sure they showed dough expansion during the various stages of proofing.
so i cant remember what book i saw it in - any ideas?

i would have gambled a big stack of money it was at the front of a book.
i have been reading Hamelman, Bread, 1st edition, as i have the new edition on order.

the only trouble is i thought it was about expansion during proofing.
sadly its about the growth in size when building a starter and making the dough.
so now i have it i am no nearer my goal.
