My wheat bread doesn't rise enough
I have been grinding my wheat and baking wheat bread for years. My last two batches just didn't seem to rise like they should. I have tested my yeast - it is okay. I thought the first batch wasn't good because my flour was cold. I recently opened a new bag of wheat (I used hard white wheat). Could the wheat be the problem? If so, is there anything I can do about it?




....variations in bags of wheat berries. My last bag (50 lb bag) produced doughs that seemed much more extendable than previous batches.
As far a what to do...try to get some information from the supplier. two batches can be a small sample depending on what a batch is.
Lastly, you could try adding vital gluten, although I've not seen much difference in using it.

You have confirmed what I thought. I may try another batch but I think what I'll do is use this wheat in other recipes and get a new bag for bread.
