Hello from Central Texas!

Hi everyone,

I've been baking bread (holiday's, family gatherings) since the mid-70's using standard recipes and procedures.   Now, I would like to learn how to CRAFT quality bread.

I'm eager to learn from everyone and would appreciate reading material advice and any other suggestions that would help me create beautiful bread.

I strongly recommend you get a copy of 'Bread'by Jeffrey Hamelman.  A second edition has just come out:

As a beginning bread baker, I used The Bread Bible by Rose Levy Beranbaum religiously (ha). While I still love that book, as I've gotten more advanced I've started working through Peter Reinhart's Whole Grain Baking, which is fantastic.

For learning opportunities, look at both the Lessons and the Handbook sections of TFL.  Links are at the top of the page.  If you want information on a particular subject, start by using the Search tool; the box is at the upper left-hand corner of the page.  Odds are pretty good the topic has been brought up at least once (queries for mixer recommendations seem to show up on a quarterly basis, it seems).  For instance, if you want to know about pumpernickel breads, type "pumpernickel" (without the quotation marks) in the Search box. You will get hundreds of posts from many different discussion threads and blogs here on TFL.
