Pain de mie (pullman loaf)

My first attempt at using my new KAF pullman loaf pan. The recipe I used was their insert that came with the pan. It's cooling as I type this, so I won't have cut pics till sometime tomorrow.

where is the recipe

14 oz bread flour

2 Tbs sugar

1 tsp salt

2 tsp instant yeast

1/2 stick butter

1/4 cup scalded milk

3/4 cup water

After 2nd rise put in Pullman pan and let rise until some part touches lid. Bake 27 mins at 350. Then remove lid and another 7 mins.
