New Baker

Hi all,

I'm a new baker in Kalamazoo, MI. Originally from NY/NJ and missing good bread out here (particularly a crusty rye). My grandmother was quite good at it and so I'm kind of hoping there's something in the genes.

I've wanted to learn to bake bread for some time and kept saying I would. I finally had some time recently, looked up a recipe and thought "water, flour, salt? I can do that."

First loaf tasted great, but way too dense.
Second loaf (french bread) was much better.
Third loaf may be my first fatality, but that's for a different thread.

Some of the recipes on here look great and I've already read some of the tips/techniques. Looking forward to learning from folks who've had more experience!

Greetings from the north (and quite snowy) woods of Michigan.

If your originally from the NY/NJ area, you're probably missing good bagels, too - but that's easily remedied by baking your own.

Yes..I'd love a proper bagel. I worked with the baker in a bagel shop for awhile so have a good idea on the technique...but my family will still tell me it takes NY water =).

So is Northern Michigan's!  

Using Hamelman's formula from Bread, I easily make bagels as good as the ones I enjoyed when I lived in NYC - and better than some of the ones currently being sold there!

Ah Kzoo! Spent some time there briefly when I was starting out college a few years ago. Welcome aboard and enjoy your stay!

Eric's Fav Rye is a nice recipe for you try at, and I am sure there are quite a few other great Ryes on this site. I've seen many over the years but can't recall them all.

Can't wait to see you progress!

Western?

Yes rye is next after tonight's near disaster was saved and turned out to be the best crustiest bread I've made yet! I was so excited.

Had a friend at Western and my band played a few shows at some house parties. After moving around for a few years, I have located myself near my new bakery of Employment (Zingermans), but really need to visit Kzoo again sometime.

Last time I was near Zingerman's I came home with a large shopping bag full of bread and bagels =)

If you ever stop by the bakehouse and see a young man with a lot of tattoos (including bread ones on his arm!), ask to see him! I always love meeting other bread-nerds! Plus, I'll do my best to show you around the production area!
