I just made some pumpkin spice muffins (recipe on my blog) this week that turned out really good. It's a recipe I've been tinkering with, and I think this batch had the best domes I've come up with. I think you could easily replace the pumpkin with mashed bananas or maybe applesauce and get a good muffin, too, but I haven't tried that yet.
