Ok. My nearly new KA PRO 500 which crashed while doing a simple english muffin bread is no longer able to knead dough. So much for $499. I have been making bread and in particular the Cook's Multi Grain recipe for 2 years now. I add wheat gluten and DSM. Now that I have to knead by hand from the beginning of the process I am no longer getting any oven spring. I put the dough in the oven when it is just over the top of the pans and most of the two knuckle dent bounces right back, but still no oven rise. I am concearned that maybe I am kneading too strongly--I try to just push gently with the back of my hand, but feel that somehow this is my problem. Any other suggestions? Thank you.
